Sean studied finance at Georgia State University, but it was his part-time job as a cook at Atlanta’s Buckhead Diner that captured his heart. He went on to chef for some of America’s most acclaimed culinary talents in the kitchens of: Bouley, Le Bernadin, Daniel and Patina where he began his winning relationship with Joachim Splichal. Knight helped Splichal take his company from three restaurants to over 25 properties. Their enviable professional friendship thrives to the present. At St. Helena’s Pinot Blanc, the San Francisco Chonicle awarded Knight three stars.
Recognizing Sean’s considerable galvanizing and leadership strength, Cindy persuaded him to join her as director of operations in 2004. Both Cindy's Backstreet Kitchen and Mustards Grill have benefited greatly from his experience and expertise. In 2007, Sean and Cindy opened Go Fish with Sean playing a strong role from conception to construction to current operations. In 2011, Sean and Cindy opened Brassica at the Go Fish site and later in 2012, Cindy Pawlcyn's Wood Grill & Wine Bar (CP's for short). Sean was instrumental in all aspects of the process, from the innovative new wine program to the physical redesign.
Now as Managing Partner in 2012, he continues to play a profound role in making Mustards Grill, Cindy’s Backstreet Kitchen and CP's the successful restaurants they are today.
